The way I cook food is the way I like to eat it.

I have made a monk fish wellington that has been put on a few menus.
Which other chef’s) do you most admire?
Marco Pierre White has always been a firm favourite but I admire all chefs that put the work in to make awesome food.
What’s the best part of your job?
Being able to be creative and having access to the best ingredients on offer.
And the worst?
Being away from my family.
What would your last meal be?
A debate I have had may times with my answer changing between a butter pie and mushy peas or a proper Lancashire hotpot, or both!
