How long have you been at the restaurant?
I have been leading the team at Kitchen W8 since we launched in October 2009.
Which was the first restaurant you worked in?
The first job I had was at a pub called the Hartford bridge in the Hampshire Village called Hartley Witney.
What was the last London restaurant you went to, apart from your own?
The last restaurant I dined at was Fantomas on the Kings Road in Chelsea.
What or who has been the biggest influence on the way you cook and why?
The biggest influence has to come from your mentors. I am lucky to have had a few, but the ones who stand out are John Campbell and Phil Howard, both hugely inspiring leaders.
What is your personal signature dish?
Scorched Cornish Mackerel, Smoked Eel, Sweet Mustard and Golden Beetroot.
What’s the best part of your job? .
Delivering pleasure through exceptional food and warm hospitality.
And the worst?
I enjoy every aspect of the job!
What would your last meal be?
Sunday Roast, good quality sustainable meat.
Sat around the table with my whole family.
