How long have you been at the restaurant?
I have been with Soho House since 2001. I have worked in BKB, Soho House and Café Boheme.
Which was the first restaurant you worked in?
It was a small themed restaurant called Clowns in my home town of Ipswich. It was a glorified steak house.
What was the last London restaurant you went to, apart from your own?
The last restaurant I went to was Bam-Bou with all the other head chefs.
Which London restaurant is your favourite and why?
I think my fave at the moment would have to be Busaba Eathai on Wardour Street; the food is great, consistent and very reasonably priced.
What or who has been the biggest influence on the way you cook and why?
As I have spent most of my career with the company I think Soho House has mostly influenced the way I cook.
What is your personal signature dish?
Seared Scallops with Italian Sausage and Cauliflower Puree.
Which other chef(s) do you most admire?
Heston Blumenthal for his scientific approach to food.
What’s the best part of your job?
Good feedback from customers makes me feel good.
And the worst?
The age of my kitchen.
What would your last meal be?
Curried Goat, Rice and Peas.
Do you have a chef’s shortcut that you can share with us?
If you need to cut a lot of anything in half - e.g olives, cherry tomatoes or grapes - then put them between the bottom of 2 plates, press gently and run a sharp knife through them to cut them in half - Voila!
